One man’s vision

Famed for his refined approach to Grecian culinary tradition and his uncompromised passion for perfection, our executive chef & founder Costas Spiliadis, first arrived in New York in 1966 from his native Patras, a port city near the ancient Greek village of Olympia. He acquired his passion for home cooking from his mother before leaving home to study at New York University in Manhattan and Concordia University in Montreal. In 1979, he opened the first estiatorio Milos in Montreal, which rapidly became one of the city’s most influential dining destinations.

estiatorio Milos has grown to include New York Midtown (1997), Athens (2004), Las Vegas (2010), Miami (2012), London (2015), and New York Hudson Yards (2019). Throughout those years, many things have changed, except for Milos’ commitment to the sourcing of quality ingredients serving the freshest, most pristine Mediterranean seafood and the objective of respectfully cooking food in its purest form, by applying precision, so that interference with nature is minimal.

As with everything, xenodocheio Milos’ location has been carefully considered to express the true essence of Greek hospitality and the grandeur of Athens’ history. Established in 1880, our building accommodates the architectural thinking of the time, when it was accustomed to feature a shop on the ground floor and residences on the upper floors. In 1979, the Greek Ministry of Culture proclaimed it a “designated landmark building”, signifying its significance. Our whereabouts are located in the heart of the capital of Greece and opposite the Old Parliament House, history unravels at your footsteps and endless choices for exploration.
